So, lately, I’ve been all about these Spring Salads, you know, the ones filled with all those health-promoting anti-inflammatory ingredients. Have you had a chance to check out my latest creation? This Crispy Tofu Salad exudes freshness that’s truly next level! And of course, there’s always that trusty old favourite: Spicy Chicken Salad. It’s a winner every time, especially with that irresistible turmeric dressing!
A salad I simply can’t resist
Think crunchy carrots, sweet raisins, and hearty chickpeas, all coated in a tangy homemade honey mustard dressing. It’s like a party in your mouth, and everyone’s invited!
Amidst my busy schedule of gym workouts, club drop-offs and pickups for Master. IZ, and prepping for my dietitian TV appearances, I crave simplicity when it comes to nutrition. But simplicity doesn’t mean sacrificing flavour. I’m all about textures, and I’ve got a penchant for spices that borders on obsession. 🙂
And here’s the best part: you can make this carrot raisin salad your own. Don’t have carrots? No problem. Sub in some bell peppers. Run out of raisins? Throw in some dried cranberries instead. The world is your salad bowl, folks!
Nutrition goodness you can’t pass up
Crunch into nutrition-packed goodness with this carrot salad! Here’s the lowdown:
- Vibrant freshly grated carrots bring the fibre boost you need.
- Chickpeas serve up protein and essential minerals like zinc.
- Aromatic herbs like parsley and mint offer anti-inflammatory perks.
Let’s whip up this Spring salad together!

Heart-healthy hint
Boost your salad with omega-3-rich toppings like walnuts, flaxseeds, or avocado for a flavourful and nutritious punch.
Salad storage savvy: keep it fresh & crunchy!
For optimal freshness, store your salad components separately. In other words, keep your zesty dressing, crisp carrots, fragrant herbs, and plump raisins in individual containers in the fridge. When it’s time to serve, simply assemble your salad, pour on the dressing, and enjoy the perfect balance of flavours and textures.
