How to make it

Here’s a visual step-by-step guide on how to create this mocktail.

The ingredients

A collection of food ingredients including pineapple juice, coconut water, ice, honey, toasted coconut, mint and lime segment.

Step 1: Prepare the Coconut Rim

Two empty glasses and a plate with toasted coconut.
Toast desiccated coconut on a dry pan (low heat) until lightly golden.
Two empty glasses and a plate with a swirl of honey nearby.
Spread honey on a plate – about the same diameter as your glasses. This technique reduces waste.
Two empty glasses with their rims covered in toasted coconut.
Turn your glass upside down and rotate the rim in the honey, then in the toasted coconut to coat evenly. The honey helps the coconut stick to the rim. Repeat the process with the second glass.

Step 2: Muddle Mint and Lime

Two glasses with their rims covered in toasted coconut containing whole lime segments and mint leaves.
Add lime quarter and mint leaves to the glasses.
Two glasses with their rims covered in toasted coconut containing squashed lime segments and mint leaves.
Muddle mint and lime to release their juice and flavours. Take your time with this!

Step 3: Add Ice, Coconut Water & Pineapple Juice

Drop 6 small ice cubes into the glass and divide the coconut water and pineapple juice evenly between the two glasses. Garnish with a pineapple wedge on the rim of the glass for a finishing touch, and serve immediately.

Substitution Do

If you’re thinking about switching up the Pineapple Mint Mocktail, try using sparkling water or soda water instead of coconut water. It’ll add a bubbly kick while keeping that fresh and cool taste intact.
