Get ready to be whisked away to a tropical paradise with this Coconut Pineapple Mojito Mocktail! This refreshing non-alcoholic beverage blends coconut water and pineapple juice, perfectly balanced with fresh mint and zesty lime.

Ingredients
- ¼ lime cut into two segments
- 6 mint leaves large, fresh
- 6 ice cubes small
- ½ cup coconut water
- 1 cup pineapple juice no added sugar, pure nectar
- honey for glass rim
- desiccated coconut unsweetened, dry toasted for glass rim, about a tbsp
- pineapple two small chunks for glass rim
Instructions

On low heat, toast desiccated coconut in a dry pan until lightly golden.

Spread honey on a plate – about the same diameter as your glass. Turn your glass upside down and rotate the rim in the honey. Then spread the toasted coconut on a plate and rotate the rim in the coconut to coat evenly. The honey helps the coconut stick to the rim. Repeat the process with the second glass.

Add one lime quarter and three mint leaves to each glass. Muddle leaves and lime segments. Take your time to ensure you release all the juice and flavour.

Drop 6 small ice cubes into each glass and divide the coconut water and pineapple juice evenly between the two glasses.

Place a pineapple wedge on the rim of the glass for a finishing touch, and serve immediately.
