How to make it

Egg bhurji

The first step is to make the Indian scrambled eggs:

A pan with cumin frying in oil on a mobile cooktop with eggs and powdered spices.
Step 1: Heat olive oil in a large pan, then add cumin seeds. Fry until they turn lightly brown and release their aroma.

Step 2: Toss in garlic, onion, and pepper into the pan. Cook on medium-high heat for roughly 5 minutes to coax out their natural sweetness.

Step 3: Incorporate the tomatoes into the mixture and turn up the heat to high. Cook for roughly 5 minutes until the tomatoes break down and soften. Remember to stir occasionally to prevent them from sticking or burning in the pan.

Step 6: Crack ten large-sized eggs into a separate bowl to avoid any accidental eggshells in the pan and ensure food safety. Once ready, carefully add the eggs to the pan.

Step 7: Set the heat to medium-high and continuously stir the eggs in a circular motion to create a consistent blend. Keep mixing until the eggs are thoroughly cooked and the mixture appears dry. Finally, top it off with fresh coriander.

Diabetes diet advice

For folks managing diabetes, this recipe offers a great balance. The high protein content in eggs and the fibre from roti and vegetables can help stabilize blood sugar levels. However, portion control is key; be mindful of the size of your wrap and consider the inclusion of a side salad to add nutrients without excess carbs.

Food safe storage

While these breakfast wraps are best savoured fresh, they’re also a time-saver when prepped ahead. Store the curried eggs separately in an airtight container. When you’re ready, whip up a fresh batch of rotis and assemble these wraps. And guess what? They taste just as awesome when served cold, making them a perfect grab-and-go meal option!
