Step 3: Incorporate the tomatoes into the mixture and turn up the heat to high. Cook for roughly 5 minutes until the tomatoes break down and soften. Remember to stir occasionally to prevent them from sticking or burning in the pan.
Step 4: Sprinkle in the paprika, curry powder, coriander powder, green chilli, sea salt, and black pepper. Stir thoroughly to evenly coat the mixture.
Step 5: Add the spinach or your choice of greens into the pan and cook for an extra minute, allowing them to wilt slightly.
Step 6: Crack ten large-sized eggs into a separate bowl to avoid any accidental eggshells in the pan and ensure food safety. Once ready, carefully add the eggs to the pan.
Step 7: Set the heat to medium-high and continuously stir the eggs in a circular motion to create a consistent blend. Keep mixing until the eggs are thoroughly cooked and the mixture appears dry. Finally, top it off with fresh coriander.

To assemble the roti wraps:
Step 1: Take a roti and lay it out. Spread approximately a tablespoon of hummus evenly onto the roti.
Step 2: Divide the scrambled egg mixture into four portions. Add one portion over the hummus layer.
Step 3: Close the roti, enclosing the filling, and secure it by inserting a wooden knotted pick into the wrap to hold it together. Repeat with the remaining three rotis.

Instructions
Egg Bhurji
Heat the oil in a large pan, adding cumin seeds. Fry until they turn lightly browned and release their aroma.
Stir in garlic, onion, and bell peppers, cooking over medium-high heat for about 5 minutes.
Introduce the tomatoes and cook on high heat for approximately 5 minutes or until they soften and break down. Stir consistently to prevent sticking.
Add the spices and salt, ensuring a thorough mix. Reduce the heat to low.
Toss in the spinach and cook for an additional minute.
In a separate bowl, crack the eggs and pour them into the pan. Stir continuously until they are fully cooked.
Garnish egg bhurji with freshly chopped cilantro.
